Making Mushroom Sauce

As a child I was never very fond of mushrooms. As I grew up I developed a taste for them. Today I enjoy them both as a snack and as part of the main meal.

For this particular recipe these are the ingredients you will need.

About 150 grams of Mushrooms - finely chopped

3 tablespoons of Butter

2 tablespoons heaped Cornflour

About 300 ml of milk or one large cup

Some salt, pepper and mustard powder to taste

About half a teaspoon of lemon juice

2 tablespoons chopped parsley

2 green chillies - de seeded and chopped

2 tablespoons thin cream

2 cubes cheese - grated.

Now that you have assembled all these ingredients lets get cooking.

First heat the butter in a heavy bottomed pan. Add in the chopped mushrooms and cook till they are tender. Add the cornflour now and stir till light brown.

Lower the heat and add milk slowly. Make sure that no lumps form. Now boil till the sauce begins to thicken. When you feel it is the right consistency take off the heat.

Add salt, pepper and mustard powder to taste. Stir in the lemon juice and chopped parsley. Mix in the cream and green chillies. Your mushroom sauce is now ready to eat.

For garnishing you can save some browned mushrooms and toss them in just before you serve the sauce.

You can use it on any thing actually. In fact if I'm in a hurry I just use it as sandwich spread. It tastes great.

My father was probably the seccond mushroom cultivator in India (the late Col Baljit Singh was the first to my knowledge). So we have been having mushrooms for breakfast, lunch and dinner most of our lives. And never tired of them. They may have contributed to my parents' longevity.oth are well into their eighties now.

Ah! I never get this right. I'm going to use this hub some time this week and try to make some mushroom sauce. I love the idea of adding green chillies.

If you like it spicier use the chillies with the seeds.

It keeps in the fridge for two days. If you cool and freeze it should last you a week to ten days as well.
